Ice Cream Cakes

Take it from someone who has been creating ice cream cakes for over a decade: there are techniques to mastering these magnificent sweets. Learn them, and you’ll be rewarded with a delicious final meal. My family now enjoys ice cream cakes daily or birthday cake online order, but apart from that one yearly Cupid-inspired buy, I’ve mainly taken responsibility for bringing our frozen fantasies to life. The answer is to keep sponge cakes thin enough to rehydrate in melting ice cream and to use a dab of simple syrup as an insulator (equal parts sugar and water boiled together). Alternatively, you may go with my taste (like I did with this new recipe): Use brownies or blondes because they’re more significant fat and sugar content to keep them fudgy and chewy. For ice cream cakes, ingredient stability—their capacity to sustain their own and others’ weight—is critical. Each addition to the ice cream alters its behavior once frozen, so it’s essential to think about the whole. Customize your ice cream cakes to your heart’s content. But how many of those add-ons are there? Yes, there is a limit. The many pieces of ice cream cake will overwork your jaw and make slicing challenging. 

For cakes, the usual guideline is 1 to 1 1/2 cups of add-ins per quart of ice cream, with liquid add-ins at the low end of the spectrum and solid add-ins at the top end. (A hearty 3 cups of mixed add-ins to slightly under 2 1/2 quarts of ice cream, for example, is used in this cake.)

If you want swirls, remember that water is your adversary. Ice is formed when water freezes. Ice crystallizes into jagged shards, contrasting with the smooth and creamy, rich and creamy ice cream. Swirl-able ingredients include fudge sauce, gooey caramel, maple syrup, and honey.
